Alginate to form water-soluble salts with monovalent cations, as well as low molecular weight amines, and magnesium ions. Therefore alginate is a linear molecule with a high molecular weight, it is very easy to absorb water. That makes it a good once as alginate coating material. Alginate protects better immobilizing cells cultured with increasing bacterial resistance [11]. The advantage of using alginate is flexible (able to withstand the pressure from the inside), easy to use (because it does not require heating in order to dissolve), can form a gel at room temperature so that the microbial death due to heating can be reduced. However alginate has a low stability, high porosity, and are biocompatibility [12].
