ABSTRAK
Mesin pengiris ubi jalar merupakan alat bantu untuk mengiris ubi jalar menjadi irisan tipis dengan ketebalan ± 1mm. Bukan hanya itu saja, mesin ini juga dapat menghasilkan hasil irisan dengan ketebalan yang sama, waktu perajangan menjadi cepat. Penelitian ini bertujuan untuk merancang sebuah Mesin Pengiris Ubi Jalar untuk menghasilkan irisan ubi jalar/keripik ubi jalar untuk skala industry rumah tangga. Konsep perancangan mesin pengiris ubi jalar ini mengacu pada konsep perancangan Metode VDI 2221 yaitu dengan beberapa tahap, antara lain menyusun spesifikasi teknis, menyusun struktur fungsi, menyusun alternatif konsep produk, dan menyusun konsep terbaik. Dari hasil peracangan didapat sebuah desain mesin pengiris ubi jalar mempunyai kapasitas 75kg/jam dengan 2 buah pisau yang memotong ubi jalar secara kontinyu. Sistem transmisi mesin perajang singkong ini mengubah putaran listrik 1800 rpm menjadi 562 rpm dengan komponen 2 puli diameter Ø 95 mm dan Ø 304 mm yang dihubungkan oleh v-belt tipe A. Poros yang digunakan berdiameter 10 mm dengan bahan S45C. Mesin pengiris ubi jalar ini membutuhkan daya dari motor listrik sebesar 0,38 HP
