The aim of the research is FATTY ACID PROFILE OF FISH NUGGET DUMBO CATFISH (Clarias gariepinus)
Abstract
This research was conducted in December 2010 and in February 2011. The purpose of this study was to determine the profile of fatty acids contained in fish nuggets African catfish (Clarias gariepinus) , The method used in this research is the analysis method is to perform the making nuggets, oil extracting nuggets, and analyze fat content nugget. From the analysis of the fatty acid composition of fish catfish nuggets contain 30 types of fatty acids that can be identified by the type of fatty acid that is saturated fatty acids (SAFA) as many as 14 types of such (lauric acid, myristic acid, palmiltat acid, stearic acid, etc. Other) monounsaturated fatty acids (MUFA) of 8 types such as (oleic, palmitoleic, myristoleic, etc.) and polyunsaturated fatty acids (PUFAs) such as 8 types (linoleic acid / omega -6, linolenic acid / omega-3 and others). The ratio between omega-6 and omega-3 contained in fish nuggets African catfish has passed recommendations set by WHO and FAO.
