Rumput laut merupakan salah satu sumber daya perairan yang sejak lama telah dimanfaatkan sebagai komoditi ekspor hingga saat ini. Salah satu hasil ekstrak rumput laut yang cukup penting adalah karaginan. Karaginan merupakan getah rumput laut yang diekstraksi dengan air atau larutan alkali. Proses utama pembuatan karaginan dari rumput laut terdiri atas tiga tahap yaitu ekstraksi, penyaringan dan pengendapan. Penelitian ini bertujuan mengetahui pengaruh perbandingan dan jenis bahan pengendap karaginan terhadap yield dan mutu karaginan yang dihasilkan.
