Penelitian ini bertujuan untuk menjawab permasalahan apakah dengan perbedaan kondisi bahan baku E. cottonii pada umur panen 30 hari dapat mempengaruhi kualitas karaginan yang dihasilkan. Metode yang digunakan adalah metode eksperimen. E. cottonii dipanen pada umur 30 hari, dilepaskan dari talinya dengan cara dipurut sebagai kondisi patah, dilepas satu-satu dengan tangan sebagai kondisi utuh, kemudian dikeringkan. Penelitian ini menggunakan rancangan acak lengkap dengan tiga perlakuan yaitu patah, utuh dan campuran patah utuh (1:1) dengan tiga kali ulangan.
